Sweet Potato Pancakes

Sweet potato pancakes. An easy and healthy breakfast option

Ingredients 1/2 cup ragi flour 1/2 cup wheat flour 1/2 tsp baking soda 1/2 cup milk Sugar to taste 1 egg 1/2 cup mashed sweet potato *if not using an egg, use a little extra milk 1/2 tsp cinnamon powder or vanilla extract

Method -In a big bowl, add the flours, sugar and baking soda and mix through -To this add the wet ingredients- the milk, egg and mashed sweet potato - Add the cinnamon or vanilla and mix until everything is just combined - Heat up a pan on the stove. Add a dollop of butter. When it starts to melt, add a scoop of the pancake batter and cook until bubbles appear on the edges. Flip and cook for another minutes ***you can also make this with maida or use just one flour rather than 2. Make it your own
