Stuffed Baked Potatoes


I am so excited to be doing a potato week this week! And this is the perfect recipe to start it off with. Easy, quick and delicious. Good for a light brunch, dinner or served as as a side dish. It can be made with eggs or for my, vegetarian friends with paneer. Let's get started!! Ingredients 2 large potatoes 2 eggs OR 1/4 cup crumbled paneer 2 tbsp fresh cream 2 tbsp grated cheese One finely chopped spring onion 2 tbsp finely chopped red pepper 4 sliced mushrooms Salt and pepper to taste Chili flakes Oil Method -Preheat the oven to 180 C -Boil the potatoes in the cooker until they are soft and done -Sauté the spring onion, red pepper and mushrooms lightly -Cut only the tops off and scoop out the center flesh. Put it in a bowl and mash it



-To this mashed potato, add the eggs (or paneer) and fresh cream along with a generous amount of salt and pepper. These potatoes must be well seasoned! -Mix until everything is well combined -Pour this mixture into the potato shells and top with the grated cheese -Bake at 180 C for 20 minutes



**if you are making more potatoes, just adjust the quantities accordingly
