Sticky Date Pudding with Caramel Sauce

Eid Mubarak to everyone celebrating! I hope you will incorporate these 'heaven on a plate' sticky date puddings with caramel sauce on your table. I have to say, these are one of the best things I've made this whole lockdown. Try it out!! They are sure to become a family favorite after just one bite

Ingredients 1/2 cup boiling water 200 grams seedless dates chopped roughly 1 1/3 cups flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 3/4 cup butter 3/4 cup brown sugar 2 eggs 1 tsp vanilla extract 1 tsp cocoa powder


Method -Preheat the oven to 180 C -Soak the dates in the hot water -In a bowl, mix together the flour, baking powder, baking soda and salt. Set aside -In another bowl, beat the brown sugar and butter until smooth. Add the eggs one at a time -Make a rough paste of the soaked dates and add them to this mixture along with a few finely chopped dates for texture ( if desired) -Add the flour mixture into this wet mix and stir until no streaks of flour are visible. -To this, add the vanilla extract and the cocoa powder. Mix until incorporated -Generously butter a muffin pan and scoop the batter into the cavities -Bake for 15 to 17 minutes

-This will fetch you 12 puddings For the caramel sauce, melt together on low flame 2 tbsp brown sugar with 2 tbsp condensed milk and a little bit of water (add as needed). It will turn into a nice pouring consistency
