Rustic Tomato Galette

This is a light and refreshing lunch, brunch or dinner!

Perfect for the summer as it requires the minimum amount of time in the kitchen

Try it out!


For the crust

1 1/2 cups whole wheat flour

100 gm cold butter (cut into cubes)

1/2 tsp salt

1 tbsp fresh cream

For the filling

Tomato slices ( baby tomatoes or regular sized ones will do)

1 onion caramelized by cooking in oil and brown sugar over the stove

1 handful of spinach - blanch in hot water for a minute

1/2 cup cheese - any kind you would like!


Make the crust by adding the butter to the flour and salt and mix with your fingers until you have rough breadcrumbs

Add in the fresh cream and knead until you have a dough (Add a bit of water or milk, if necessary)

Roll it out into a rough circle and set aside on a lined baking tray

Add the cheese to the center of the dough circle. Top with spinach and tomatoes and lastly the caramelized onion.

Fold the edges of the dough towards the center and press it in tight to seal

Bake at 180 C for 25 minutes
