Onion & Tomato Tarte Tatin

This Onion & Tomato Tarte Tatin combines all your favorite flavors into one fancy dish to impress

For the pie crust

Mix 1 cup all purpose flour with 1/3 cup cold butter, cut into cubes.

Add 1/2 tsp salt and 3 to 4 tbsp cold water. Knead together into a light crumbly dough. Roll this dough out between 2 sheets of cling film into a rough flat circle and let it set in the fridge while you get on with the rest of the recipe.

For the filling

Cut 4 small onions, 4 tomatoes, 4 shallots into halves and keep aside.

Place a round baking dish on the stove top. Melt 75 grams of butter on low heat. Add fresh or dried herbs, finely chopped spring onion greens, garlic.

Place all the vegetables with the cut side down into the pan. Season with salt and pepper. Cook for 10 to 15 minutes. Add a tbsp of brown sugar and lemon juice. Cook for another few minutes.

Grate cheese over the top of the veggies.

Take your pie crust and place it over the top and tuck in the edges.

Place the pan in a preheated oven and bake at 200 C for 25 minutes
