Oat Muffins

What can i say about these Oat Muffins!
They make a perfect brekkie, especially for fussy kids like mine, who will not look at oats otherwise.
They turned our surprisingly soft and predictably delicious!

Ingredients
1 cup milk
1 cup rolled oats
150 gm oat flour
1 tsp baking soda
1/2 tsp cinnamon powder
1/2 tsp salt
115 gm melted butter
1/2 cup honey
1 egg
1 tsp vanilla essence
1/2 cup chocolate chips/blueberries or whatever you would like to throw in
Method
Pre heat the oven to 180 C
Mix the oats and milk together, and set aside for 15 min
Proceed to mix together the dry ingredients - oat flour, baking soda, cinnamon and salt
Mix the wet ingredients together in a separate bowl - the butter, egg, honey and vanilla essence
Add the wet ingredients into the dry and give it a good mix with an electric mixder or whisk it well by hand.
Add the oat and milk mixture to this and combine it in well.
Lastly, throw in the chocolate chips and scoop into a lined muffin pan.
Bake at 180 C for 25min
