Oat and Cheese crackers
In my attempt, as always, to eat healthier in the new year, I made these oat and cheese crackers to have as a snack.
And they turned out really good!!
1/2 cup rolled oats
1 cup oat or wheat flour
1/2 an onion, chopped very fine
1 tbsp coriander, leaves chopped very fine
1 cheese cube, grated
2 tbsp butter
1/2 tsp salt
1 tbsp sugar
1/4 tsp baking soda
A little milk for kneading, if required
Preheat the oven to 180 C
In a bowl, combine the rolled oats, flour, salt and baking soda
In another bowl, add the butter and sugar and whisk it well. Add the onion and coriander to it and mix again.
Add the dry mix in installments and knead until it forms a dough ( you may or may not need to add milk to this, see how it goes for you )
Add the grated cheese
Roll the dough between two sheets of baking paper and cut into squared or rectangles
Place on a greased baking sheet and bake for about 20 min
