Linzer Cookies


Linzer cookies are one of my absolute favourite cookies to make! Not only are they quick and easy, they always look so beautiful. Made these for Valentines day this year


Here's how you can make yours


Ingredients 2 1/2 cups flour (375 gm) 1/2 tsp salt 3/4 cup butter (170 gm) 1 cup powdered sugar (115 gm) 1 egg 1 tsp vanilla extract 4 tbsp strawberry jam

Method -Preheat the oven to 180 C -Mix the flour and salt together and serve aside -Cream the butter and sugar together until fluffy. Add the egg and vanilla to this and mix again until incorporated -Add the flour to this mixture in 3 installments until it becomes a soft dough -This will need to be refrigerated for at least an hour or more for best results -Roll out the cookie dough between 2 sheets of cling wrap or baking paper - Cut into circle shapes with a cookie cutter. Further, on half of the number of circles, cut out a little heart shape in the center - Spread a little bit of jam in the center of the circle and top with the circle with the heart shape -Place on a greased and lined pan and bake for 12 min or until slightly brown -ENJOY!
