Easy Fruit & Nut Cake

This simple tea cake a reminder that we do not necessarily need frosting in our lives to make it sweet. There is sweetness in simplicity.

Try this easy tea time fruit and nut cake and enjoy it, any day of the week!


125gm maida

1/2 tsp salt

115gm soft butter

115 gm castor sugar

2 eggs

2 tbsp milk

1tsp vanilla extract

A nice big handful of fruit and nut ( I used raisins and almonds)


-Preheat the oven to 180C

-In a small bowl, add the salt to the flour and mix well

-In a larger bowl, cream the butter and sugar until light and fluffy

-Add the vanilla extract and beat again

-Add the eggs in one at a time and beat after every addition

-Fold in the flour in 2 installments

-Add the milk and mix until the batter is of a smooth consistency

-Lastly fold in the fruit and nuts and mix until incorporated

-Bake for 30 to 35min at 180C
