Easter Rocky Road


Easter rocky road!!


I'm sharing this today, because if you need a last minute quick fix to make something for Easter, this is it!


Ingredients


450 gm chocolate (I used a mix of dark and milk)

65 gm marshmallows (mini work best, but big ones will do too)

65 gm (or just wing it) dried fruit and nuts

Mini chocolate eggs and extra marshmallows to decorate the top



Method


Melt the chocolate over a double boiler

(This much quantity is safer to do over a double boiler rather than a microwave, it might burn)

Once melted, add the marshmallows, dried fruit and nuts and mix it through until coated in the chocolate

Pour into a lined tray and top with more marshmallows and mini Easter eggs (if you have em, or else just the marshmallows will look pretty too)

Leave to set in the fridge for 1 to 2 hours. Cut into shapes and enjoy
