Date and Walnut Christmas Cake




My Christmas cake isn't a traditional fruit cake, rather i make this lighter date and walnut cake with a hint of orange which makes it festive and Christmasy!

Takes half the time and honestly that works because there is so much to do this time of the year!!

Ingredients


1/2 cup boiling water

200 grams seedless dates chopped roughly

1 1/3 cups flour

1 tsp baking powder

1 tsp baking soda 1

/2 tsp salt

3/4 cup butter

3/4 cup brown sugar

2 eggs

1 tsp vanilla extract

1 tsp orange zest

1 tsp orange juice

1 tsp cocoa powder

!/2 cup chopped walnuts


Method


-Preheat the oven to 180 C

-Soak the dates in the hot water

-In a bowl, mix together the flour, baking powder, baking soda and salt. Set aside

-In another bowl, beat the brown sugar and butter until smooth. Add the eggs one at a time. Add in the orange zest and juice

-Make a rough paste of the soaked dates and add them to this mixture along with a few finely chopped dates for texture

-Add the flour mixture into this wet mix and stir until no streaks of flour are visible.

-To this, add the vanilla extract and the cocoa powder. Mix until incorporated

- Add the chopped walnuts and mix until combined

-Pour the batter into a loaf tin and smoothen the top

-Bake for 25 to 30 minutes
