Chocolate Chip Cookies

These were our "Cookies for Santa" this year!

Light, crispy yet chewy and certainly the best chocolate chip cookies I've ever made. The proof is in the pudding, as they say. These cookies were over before we could save a few for Santa! Had to end up making another batch


1/2 cup castor sugar

1/2 cup brown sugar

1/2 cup soft butter

1 egg

1 1/2 cups flour

1/2 tsp baking soda

1 tsp salt

1/2 cup chocolate chunks or chips


Using a hand blender, mix both the sugars and butter until fluffy

Add the egg and mix well

Sieve and add the flour along with the baking soda and salt

Stir in the chocolate chunks/chips

Chill the cookie dough for BOUT 30 min to and hour in the fridge

Make dough balls and flatten them out before placing on a lined tray

Bake at 180 C for roughly about 10 min

*these cookies will spread out when baked, so smaller the dough balls, the better

**the cookies will harden as the cool
