Carrot Cake Donuts

It's the time of year for carrot cake! Or carrot cake donuts! Or carrot cake muffins! I really like using veggies and fruit in my baking...can get all sneaky and have the kids gobble up what's good for them which they would otherwise say a big fat NO to Go on, make these and sneak in the goodness of carrots into a delicious treat Ingredients 1 cup flour 1 tsp cinnamon powder 1/ tsp baking powder 1/2 tsp baking soda 1/2 tsp ground ginger 1/2 tsp salt 1 egg 1/2 cup brown sugar 1/2 cup milk 1 tsp vanilla extract 1/2 cup grated carrot Method Mix all the dry ingredients in a bowl. Give it a good whisk and set aside In another bowl, whisk the egg and brown sugar together until it looks like caramel To this, add the milk and vanilla and mix well Fold the grated carrots through Fold in the dry mixture until everything's incorporated Pour the batter into a donut mold Bake at 180C for 15 to 18 minutes **If you don't have a donut mold, these will make great muffins too!!
