Baked banana bread pudding


I really do love a ready breakfast, one that I doesn't have me in the kitchen first thing in the morning. This banana bread pudding is one such meal that can be prepped before hand and only needs to be warmed up before serving. It is super easy and quick to make, and also nutritious. So no guilt. C'mon, give it a go. This is a great way to use up any over ripe bananas you might have Ingredients 4 slices of brown bread (or white) 1 cup oats 2 1/2 cups milk 1/4 cup butter 3 ripe bananas 1/4 cup brown sugar 1/4 cup chocolate chips/raisins/nuts Method •In a large bowl, break the bread into small pieces. Add the oats and milk to it and leave it to stand for 30 min •Preheat the oven to 180 C and lightly grease the bottom and sides of your baking dish •To the mill mixture, add the butter, brown sugar, mashed bananas and chocolate chips/raisins whichever you're using •Stir it all together to combine and then pour into the baking dish and bake for around 45 min
