Almond Cookies




How do i put on here, the delicious aromas which wafted from my kitchen while these babies were being baked!!!!!! I could hardly wait to try em as soon as they got out of the oven, that good!


When my kids were babies, i was advised to not give them nuts until age 2, because of possible nut allergies. ( I don't know if there is any truth to this). So basically, 'no nuts' in their early diet brought on a dislike for nuts even now. The both of them have not taken a shine to dry fruits of any kind. But i believe it is important to include it in their diet.


So the mommy monster came up with a savage plan to fool them into eating nuts and not even knowing it. These delicious almond cookies hit the absolute right spot and makes it very very very easy to have at least 3 to 5 in one go.


Please try it out, you will not be disappointed!!


Ingredients


1 cup finely ground almond flour/almond meal

4 tbsp ghee/clarified butter OR 4 tbsp melted butter

6 tbsp confectioners sugar

1/2 tsp vanilla essence

pinch of salt

1/3 cup chopped almonds ( or any nuts of your preference )


Method


Add the almond flour to a large mixing bowl

Add the confectioners sugar, salt. Give it a little mix

To this add the ghee/melted butter and vanilla essence and mix until it forms into a dough.

Time to add the nuts! Fold em into the dough and you're all done.


Shape the cookies by hand, into little balls. Flatten them down slightly with the back of a tea spoon. These cookies don't spread very much, so can cram as many as you like onto the baking tray. Yes, we are busy mamas!!


Bake at 180C for 12min
